Our Bread
Our gluten free bread has been raved over by so many customers! It is flavourful, and free of preservatives. Our basic white bread contains: brown rice flour, rice flour, tapioca starch, water, eggs, canola oil, sugar, yeast, xanthan gum, and sea salt, and all of our other rice breads just build on this recipe.
Our most popular bread is our newest recipe named ‘Joe’s Sandwich Bread’ after our founder, Joe. This bread is dairy free as well as Gluten free and is 25% larger than our other rice breads. This new recipe introduces a small amount of Montana Gluten Free Oat flour which greatly improved the texture and longevity of this gluten free loaf. This recipe can also be enjoyed in hot dog or hamburger buns.
We have 9 different kinds of bread, so there's something for everyone. Most are dairy free, and they can all be made egg-free! We know that there are all kinds of different allergies and food sensitivities, and we try to meet your needs as much as possible.
Besides bread, we also make hamburger and hot dog buns, cinnamon buns, and pizza crusts. And if you prefer to make your own bread, well... our shelves are stocked up with Montana Gluten Free oat bread mix, and our own signature flour that you can use in any recipe.
Cakes, Pies, and Squares
For every occasion, there is a dessert. And at the Totally Gluten Free Bakery, we have plenty of those to choose from. With 4 varieties of pies, endless squares, all kinds of cakes and cupcakes, and creamy cheesecakes, you will find what your tastebuds desire. We take all kind of special orders for birthday cakes (egg free, dairy free), and have done some beautiful decorations. We offer four different sizes of cakes, and we have even done wedding cakes. And if you're not sure? Just give us a call and ask to talk to the cake decorator. She will do her best to give you the most fantastic cake you will ever have.
Muffins
We pride ourselves on our fresh, tasty, home-baked muffins. Variety is a big factor, and so we have 7 types of muffins that are regularly available, as well as some seasonal ones (like pumpkin spice around the holiday season).
Our regular muffins are: apple blueberry, banana, banana chocolate chip, lemon cranberry, lemon poppyseed, and vanilla raspberry. All of these are naturally dairy free, except for the banana chocolate chip and the vanilla raspberry!
Our muffins [may] contain all or some of the following: white and brown rice flours, tapioca starch, canola oil, eggs, applesauce, blueberries, bananas, lemon, poppyseeds, cranberries, white sugar, rice milk, vegetable shortening, chocolate chips, baking powder, baking soda, vanilla flavoring, salt, and xanthan gum.
Pizzas and Meals
Our pizzas are known around Central Alberta for being the BEST gluten free pizza there is. Lots of toppings and lots of cheese packed into every bite makes for an excellent meal. Speaking of meals... We have 3 entire freezers dedicated to quick and easy take-home meals. Most of them just need a few minutes in the microwave and they are ready to eat. Chicken ranch paninis, chicken pot pie, lasagna, pasta, mini pizzas, quiche, pizza buns, Stella's perogies and ravioli, and soups are all available in-store.
Cookies
We make chocolate chip cookies, double chocolate chip cookies, ginger snaps, molasses cookies, glazed lemon cookies, m'oreos, oatmeal chocolate chip and raisin cookies, and stroop waffles! We also make seasonal shortbread cookies (decorated for various holidays and events), and sugar cookies.
